Carrot Cake

I LOVE carrot cake! Its one of my favourite so I want to share it with you 🙂
This is a great carrot cake recipe that is easy to make. The cream cheese icing method is simple to make and delicious.
I tend to reduce the amout of sugar in the recipe due to the cream cheese icing being sweet enough.
Warning: This recipe is in no way healthy despite the vegetable content and I advise making it when you have family or friends around otherwise you will eat it all.
Serves: 12
250g self-raising flour
2 teaspoons ground cinnamon
300g-400g caster sugar
350ml vegetable oil
4 eggs
350g grated carrots
120g chopped walnuts
Cream cheese icing
225g cream cheese
110g margarine, softened
450g icing sugar
120g chopped walnuts
1 teaspoon vanilla extract

  1. Preheat the oven to 180 C / Gas 4. Grease two 23cm round cake tins.
  2. In a medium bowl, stir together the flour, cinnamon and sugar.
  3. Add the oil and eggs then mix until blended, stir in the carrots and nuts.
  4. Divide the cake mixture evenly between the two prepared tins.
  5. Bake for 30 minutes in the preheated oven. or until a skewer inserted into the cake comes out clean.
  6. Cool cakes on wire racks before removing from tins.
  7. To make the icing: In a medium bowl, cream together the butter and cream cheese, add the sugar and vanilla and cream well.
  8. Use the icing to ice the cooled cake layers adding the walnuts to the top of the cake for decoration; either chopped or whole,
